We enjoyed a bus tour with a guide from Amsterdam who told us about the history and sites of Amsterdam.  We visited a farm that made the traditional wooden shoes and gouda cheese.
 The home and the cheese making and shoe making workshops.
A significant part of Holland is situated up to approximately 7 meters below sea level. The Dutch don’t notice any of this though, because an incredibly innovative and intricate system keeps the ever-rising seawater from flooding the land. Even during spring tide, the Dutch are safely guarded from being washed away.  Windmills are a part of this system pumping water.  This is one of the few remaining in Amsterdam.  The windmill keepers can live cheaply in these homes, but must maintain the thatch roof and move the blades to catch the wind.
